“The 2016 Estate Cabernet Sauvignon marks my third vintage in this portfolio of beautiful wines, and likely one of our proudest efforts to date. As it often takes a few years to truly learn a vineyard, Wes and I took the opportunity the perfect growing conditions in 2016 offered and craft a beautiful expression of pure Cabernet Sauvignon from the family estate. The wine shows a more savory focus, with notes of Chinese five spice, bittersweet chocolate ganache, white pepper and candied currants. Having barrel fermented nearly 30% of the fruit for this wine, the mid-palate and body are seamless and finely polished, maintaining the acid and tannin tension one would hope for and expect from a mountain estate. This wine will show beautiful upon release with time in the decanter, and will age gracefully for many years to come!” — Martha McClellan, Winemaker
The near perfect 2016 growing season started early with idea weather throughout, with most all fruit in the valley having been harvested by mid-October. Thanks to a steady and not excessively-hot July and August, followed by our typical arrival of an early September “Indian summer,” we were able to reach a beautiful level of physiological ripeness. While yields did not return to average levels, the quality of the wines is spectacular!

“The 2016 Cabernet Sauvignon Estate is deep purple-black colored and sashays out or the glass with youthful red and black currant scents plus hints of crushed black cherries, mulberries, cigar box, Indian spices and forest floor. The black fruit and earth layers fill the medium to fill-bodied palate, framed by firm, grainy tannins and finishing with a compelling herbal lift.”

Varietal Composition: 100% Cabernet Sauvignon
Harvest: Hand-picked at physiological ripeness early to mid-October.
Fermentation: Double hand sorting, whole berry fermentation, thirty percent fermented in new French oak barrels with an average maceration of 50–60 days.
Cooperage: 26 months in 100% new French oak from select artisan coopers.
